From Dreams to Reality: Meet Elizabeth

Family in kitchen laughingFrom as far back as I can remember, I dreamed of being a mom.

It was a dream inspired by the incredible women who came before me—my mom, my grandmother (Nan), and even her mom. They shared a special bond passed down through generations, and I knew I wanted to create something similar with my children.

When my husband and I found out we were expecting our first child, we decided to keep the gender a surprise. On the day our daughter was born, my husband announced, “It’s a girl!” At that moment, my lifelong dream came true. I kid you not—it was actually a real dream of mine. I vividly remember seeing her face and curly hair in a dream when I was young, maybe in my early 20s. And though I didn’t become a mom until I was 31 if you know my daughter, you’ll recognize those curls—they set her apart.

There was a time I doubted I’d become a mother, perhaps because I wanted it so deeply. But there she was, my beautiful daughter and the bond we share today is beyond anything I could have imagined.

Three years later, we welcomed our son into the world. I was amazed by the instant connection I felt with him. I hadn’t realized just how deep the bond could be between a mother and her son, and the moment I held him, I knew my heart had expanded in a way I never thought possible.

Now, with my children, who are 13 and 10, I look back on all I’ve accomplished—earning my master’s degree from Columbia University, starting a private nutrition practice, teaching as a nutrition professor, and publishing a cookbook. But being a mom is still and will always be my most cherished role.

Our family, like all others, faces its challenges. Our daughter lives with multiple food allergies, and our son has dyslexia. Working through these obstacles together has only deepened our connection and taught me even more about resilience, love, and the strength of family.

I continue to evolve as a mom, wife, woman, friend, sister, and daughter, and I’m so grateful for every step of this journey.
